The effect of climatic variation over the last decades in Mallorca and its effect on the main quality parameters of the grapes will be evaluated, with special emphasis on the accumulation of sugars and the evolution of must acidity. The main objectives of the project are:
(i) To study the evolution over time of climatic indices in the wine-growing areas of Mallorca.
ii) To evaluate the evolution and/or changes over time of the main grape quality parameters.
iii) Relate changes in climatic indices with the evolution of quality parameters in different varieties.
iv) Study of different options for adaptation and mitigation of the negative effects of climate change on the chemical composition of the fruit.
